{"id":8787,"date":"2019-11-13T21:22:50","date_gmt":"2019-11-13T20:22:50","guid":{"rendered":"http:\/\/leblogaroger.eu\/?p=8787"},"modified":"2024-03-21T17:00:57","modified_gmt":"2024-03-21T16:00:57","slug":"la-reduction","status":"publish","type":"post","link":"https:\/\/leblogaroger.eu\/index.php\/2019\/11\/13\/la-reduction\/","title":{"rendered":"La r\u00e9duction"},"content":{"rendered":"\n<p class=\"has-drop-cap wp-block-paragraph\">Aujourd&rsquo;hui, je vais vous parler d&rsquo;un sujet que j&rsquo;affectionne particuli\u00e8rement en ces temps du \u00ab\u00a0<em>tout full proof<\/em>\u00ab\u00a0, la <strong>r\u00e9duction <\/strong>dans le monde des spiritueux et plus particuli\u00e8rement dans le monde du rhum.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Cet article a \u00e9t\u00e9 initi\u00e9 pat Simon de <strong>pr\u00e9f\u00e9rence rhum<\/strong>, car il sait que j&rsquo;aime les spiritueux plut\u00f4t fins et \u00e9l\u00e9gants comme certains rhums r\u00e9duits peuvent l&rsquo;\u00eatre. Du coup, il m&rsquo;a propos\u00e9 de faire un sujet commun, mais via deux articles sur nos deux blog.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Bien entendu, loin de moi l&rsquo;id\u00e9e de vous faire un cours <strong>technique <\/strong>sur la r\u00e9duction, je n&rsquo;en ai pas la capacit\u00e9&#8230; Cet article est plut\u00f4t un petit recueil de pens\u00e9es sur la r\u00e9duction.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Une belle introduction \u00e0 d&rsquo;ailleurs \u00e9t\u00e9 faite par <strong>Marc Sassier<\/strong>, celle ci pouvant \u00eatre consultable <a rel=\"noreferrer noopener\" aria-label=\"ici (s\u2019ouvre dans un nouvel onglet)\" href=\"http:\/\/preference-rhum.fr\/le-degre-ideal-lavis-de-lexpert\/?fbclid=IwAR2O0GXNPiwaX6unpMKlDQkqLHRglLNO6EYzacvTrhHflCxQVWEKfpPB4Xg\" target=\"_blank\">ici<\/a> et l&rsquo;article de Simon sur le site de <a rel=\"noreferrer noopener\" aria-label=\"pr\u00e9f\u00e9rence rhum (s\u2019ouvre dans un nouvel onglet)\" href=\"http:\/\/preference-rhum.fr\/\" target=\"_blank\">pr\u00e9f\u00e9rence rhum<\/a>&#8230;<\/p>\n\n\n\n<hr class=\"wp-block-separator has-text-color has-luminous-vivid-orange-color has-css-opacity has-luminous-vivid-orange-background-color has-background\"\/>\n\n\n\n<p class=\"wp-block-paragraph\">La grande mode actuelle dans notre petit monde du rhum est de souvent proposer des alcools \u00e0 fort degr\u00e9s&#8230; Bon nombre de sorties, pour geek comme probablement vous et moi, affichent souvent plus de <strong>60%<\/strong> d&rsquo;alcool  et le <strong>brut de colonne<\/strong> est en pleine expansion, m\u00eame si cela devrait s\u2019essouffler assez vite je pense. Juste une chose, <strong>l&rsquo;\u00e9quilibre<\/strong>.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>John Barrett<\/strong> de chez Bristol, par exemple, aime son rhum entre <strong>43 et 48%<\/strong> car cela permet de garder beaucoup de saveurs sans trop diminuer le plaisir de d\u00e9gustation. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">N\u00e9anmoins il a tenu compte du march\u00e9 et \u00e0 donc propos\u00e9 certaines r\u00e9f\u00e9rences non r\u00e9duites. Car oui, la demande pour ce genre d&#8217;embouteillage a bien \u00e9volu\u00e9 en quelques ann\u00e9es&#8230; <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Mais r\u00e9duire un rhum correctement est un art, que Mr Barrett et Mr <strong>Samaroli <\/strong>ma\u00eetrisent \u00e0 la perfection&#8230; Comme l&rsquo;expliquait <strong>Marc Sassier<\/strong> dans l&rsquo;article d&rsquo;introduction,  ajouter de l&rsquo;eau \u00e0 un spiritueux traumatise ce dernier: \u00ab\u00a0<em>car cet apport soudain va d\u00e9placer les est\u00e9rifications et votre produit sera d\u00e9structur\u00e9. Il faudra attendre au moins 5 jours pour retrouver un \u00e9quilibre.<\/em>\u00ab\u00a0<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Bon nombre de r\u00e9ductions faites \u00e0 la va vite ou trop importantes pourront tout simplement d\u00e9truire un superbe produit&#8230;. je n&rsquo;ai pas trop d&rsquo;exemple en t\u00eate mais \u00e7a existe clairement. Une r\u00e9duction lente, un filtrage tr\u00e8s doux (juste pour r\u00e9cup\u00e9rer les poussi\u00e8res du bois) en \u00e9vitant des temp\u00e9ratures trop basses sont les cl\u00e9s de la r\u00e9ussite.<\/em>\u00a0\u00bb <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Les go\u00fbts \u00e9voluent fortement aussi,  \u00ab\u00a0<em>Plus jeune, j\u2019appr\u00e9ciais plus les cask strength, aujourd\u2019hui un petit peu moins m\u00eame si je fais la plupart de mes embouteillages cask strength. Mais je suis extr\u00eamement patient dans le choix de mes f\u00fbts et ne choisis que des cask strength <strong>\u00e9quilibr\u00e9s <\/strong>et sans agressivit\u00e9.<\/em> \u00ab\u00a0<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Personnellement, je vais de plus en plus vers ce genre de spiritueux aussi&#8230; le dernier <a rel=\"noreferrer noopener\" aria-label=\"Caroni 1999\/2019 (s\u2019ouvre dans un nouvel onglet)\" href=\"http:\/\/leblogaroger.eu\/index.php\/2019\/10\/03\/caroni-bristol\/\" target=\"_blank\"><strong>Caroni 1999\/2019<\/strong><\/a> de Bristol titrant <strong>43%<\/strong> est pour moi une toute grande r\u00e9ussite bien que fortement r\u00e9duit. Pour autant que la <strong>qualit\u00e9 <\/strong>du f\u00fbt s\u00e9lectionn\u00e9 soit \u00e0 la hauteur. <\/em><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><em>S\u2019il s\u2019agit d\u2019un assemblage, les r\u00e9ductions les plus r\u00e9guli\u00e8rement employ\u00e9es sont 40\u00b0 43\u00b0 45\u00b0 46\u00b0. Elles correspondent au standard des embouteilleurs et du client final qui cherche juste un spiritueux sans se soucier de d\u00e9tails particuliers. Pour une d\u00e9gustation de Spiritueux d\u00e9j\u00e0 r\u00e9duit en dessous de 46\u00b0 il n\u2019est pas n\u00e9cessaire de rajouter de l\u2019eau. <\/em><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><em><strong>L\u2019eau<\/strong> : Elle joue un r\u00f4le important dans cette \u00e9tape de production. Beaucoup utilise de l\u2019eau <strong>d\u00e9min\u00e9ralis\u00e9e <\/strong>qui permet de garder tout l\u2019esprit du spiritueux, tandis qu\u2019une eau de source, <strong>locale <\/strong>ou autre, aura des incidences car sa composition min\u00e9rale influencera le r\u00e9sultat final. <\/em><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Depuis longtemps, les distilleries r\u00e9duisent leur rhums dans les cara\u00efbes et depuis quelques ann\u00e9es proposent des rhums \u00e0 plus fort degr\u00e9s.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Chez Foursquare, <strong>Richard Seale<\/strong> nous explique que les alcools faisant moins de 46% sont plus souvent des choix dict\u00e9s par les l\u00e9gislations qu&rsquo;autre chose.
