For the more assiduous <\/strong>of you, you will have noticed for a long time that my tastes are directed more and more towards the elegant <\/strong>and charming <\/strong>products. And it is clear that a fine rum having undergone a thoughtful and carefully made reduction <\/strong>or rum having had time to age well are often the only ones to arrive at this result \u2026.<\/p>\n\n\n\n

I’m not saying that bottled rums at natural degrees are bad, far from it, but it’s becoming a little too standard <\/strong>to keep the product clean of any interventions.<\/p>\n\n\n\n

Yet, careful work on the reduction can magnify a product. Let’s take a look in the mirror and we will see that many mythical bottlings have passed through this reduction box for example.<\/p>\n\n\n\n

So, Bristol <\/strong>is back in force this year with 3 new Caroni<\/strong> and I had the great pleasure of enjoying them at a party between enthusiasts.<\/p>\n\n\n\n

That’s what I noted \u2026 or at least what I remembered \ud83d\ude42<\/p>\n\n\n\n

Embouteillage original<\/a><\/figcaption><\/figure><\/div>\n\n\n\n

A caroni bottled at 40%<\/strong>, it’s a bit scary \u2026 it’s light no? Well that’s the purpose of the thing apparently, to make a \u00ab\u00a0Mellow and light\u00a0\u00bb Caroni, as indicated on the label.<\/p>\n\n\n\n

The back label tells us that the cane that served as the basis for this caroni, or at least the molasses that results, comes from the property \u00ab\u00a0F\u00e9licit\u00e9<\/strong>\u00ab\u00a0. <\/p>\n\n\n\n

This rum was initially bottled after 4<\/strong> years of aging \u2026 This version would be older than a few years on the island and in England..<\/p>\n\n\n\n

Color<\/h3>\n\n\n\n

Straw, relatively clear and impressive oily..<\/p>\n\n\n\n

Nose<\/h3>\n\n\n\n

The nose is light, with fruity aromas <\/strong>including citrus <\/strong>and mango, dried fruit, vanilla, glue, candle wax, ash wood and a less charming cardboard side.<\/p>\n\n\n\n

It’s actually very sweet <\/strong>\u2026 too much? Yes maybe.<\/p>\n\n\n\n

Palate<\/h3>\n\n\n\n

Very sweet <\/strong>again with a slight Caroni side, which seems logical, dried fruits<\/strong>, a little fruit and these typical hydrocarbons<\/strong>. The impression on the palate is rather fat and vinous strangely \u2026<\/p>\n\n\n\n

The finish is smoky <\/strong>and moderately long.<\/p>\n\n\n\n

Price<\/h3>\n\n\n\n

Conclusion<\/h3>\n\n\n\n

Caroni version specifically intended for cocktails, we can not say that it is exceptional in pure tasting \u2026 It is nice but for a price still quite substantial.<\/p>\n\n\n\n

Caroni 1999\/2019<\/h2>\n\n\n\n

First 1999 <\/strong>vintage from Bristol, it is proposed with a fairly significant reduction<\/strong>, we are at a small 43%.<\/p>\n\n\n\n

For the experience I have Caroni to 43%<\/strong> of bristol, it does not stress the least, the two \/ three other versions that I was all beautiful and full of character.<\/p>\n\n\n\n

This is John Barrett’s<\/strong> favorite degree of bottling.<\/p>\n\n\n\n

Color<\/h3>\n\n\n\n

Mahogany<\/p>\n\n\n\n

Nose<\/h3>\n\n\n\n

Houla it smells good in there!<\/p>\n\n\n\n

Brown sugar, lemon, citrus, pineapple, leather<\/strong>, chocolate, spices, rubber <\/strong>and a smoked<\/strong>, burnt and animal side.<\/p>\n\n\n\n

It is very elegant<\/strong>, sweet and really generous!<\/p>\n\n\n\n

A very caroni nose, very greedy which suggests a very nice moment in the mouth.<\/p>\n\n\n\n

Palate<\/h3>\n\n\n\n

Caroni 100% is oily<\/strong>, fruity with a big hint of roasted pineapple<\/strong>, lemons and other citrus fruits.<\/p>\n\n\n\n

The Caroni side is also present, but more erased and provides robustness <\/strong>to this very sweet and pleasant spirit.<\/p>\n\n\n\n

The length is pretty impressive for such a low degree \u2026 really a big Caroni !<\/strong><\/p>\n\n\n\n

Price<\/h3>\n\n\n\n

Conclusion<\/h3>\n\n\n\n

Top, really a big caroni full of character and generosity. Once again, this version shows us how much a well-made reduction can transcend a rum.<\/p>\n\n\n\n

We keep the fat, the power of the aromas while giving a very sweet side to this generous rum.<\/p>\n\n\n\n

Master strikes once again !!<\/p>\n\n\n\n

Caroni 1997\/2019<\/h2>\n\n\n\n

Last release of the 1997 vintage from Bristol, this version will not be reduced I think \u2026 indeed, it is strange to reduce a rum to 56.4%<\/strong> \ud83d\ude42<\/p>\n\n\n\n

This is one of the oldest <\/strong>Caroni in Bristol, 22 years old anyway!<\/p>\n\n\n\n

Color<\/h3>\n\n\n\n

\n\nMahogany\n\n<\/p>\n\n\n\n

Nose<\/h3>\n\n\n\n

Dirty<\/strong>! Hoooo it was a long time in cask \ud83d\ude42<\/p>\n\n\n\n

There is a lot of wood<\/strong>, tobacco<\/strong>, leather, a big smoked, a side \u00ab\u00a0fishy\u00a0\u00bb, the hydrocarbon is animal limit as rum. The fruits are here thanks to the cherry <\/strong>among others.<\/p>\n\n\n\n

The camphor<\/strong>, the eucalyptus and a \u00ab\u00a0burnt\u00a0\u00bb aspect come to finish this nose for the brutal word in the aromas.<\/p>\n\n\n\n

Again, as for the last 1998 employees, I am less a fan of these true 100% true profiles.<\/p>\n\n\n\n

Palate<\/h3>\n\n\n\n

True to the nose with a very austere <\/strong>side, woody, burnt<\/strong>, malted limit \u2026 the fruits are very indented, only the wooded <\/strong>side is easily noticeable.<\/p>\n\n\n\n

Price<\/h3>\n\n\n\n

A dirty <\/strong>Caroni that may have been too old?<\/p>\n\n\n\n

I’m not big fan of these old Caroni without concessions, I find them slightly austere and uninviting \u2026 after I know that some swear by this, it should therefore please you and easily a 90\/100<\/p>\n\n\n\n
