I like the exercise that is to dive into several references from the same house.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">So we leave for a discovery of the novelties of our <strong>Barbadian <\/strong>distillery and its rums round, generous and &#8230; <strong>authentic<\/strong>! !<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">And this generosity, this roundness comes in part from the barrels used &#8230; As Richard Seale likes to remind, we don&rsquo;t speak of finishing at Foursquare, but of <strong>maturation<\/strong>. The rums are aged in different types of barrels having generally contained another alcohol before.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">From brandy to Madeira to bourbon, port, sauternes and sherry and even Hampden casks for the future. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">So we will not really talk about \u00ab\u00a0<strong>pure<\/strong>\u00a0\u00bb rum but <strong>authentic<\/strong>, this practice is most widespread in the history of Barbados (and spirits in general) as explained Richard on this same <a href=\"http:\/\/leblogaroger.eu\/index.php\/2018\/03\/05\/richard-seale\/\" target=\"_blank\" rel=\"noreferrer noopener\" aria-label=\"blog (s\u2019ouvre dans un nouvel onglet)\">blog<\/a>.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">These different ages each bringing an additional aromatic layer to the rum &#8230; <strong>but not only?<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">After a long discussion with Richard, about the <strong>residual sugars<\/strong> present in these ex wine barrels, it actually appears that it does not play especially much on the rum in the end.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">For maturations, we speak of less than <strong>5 gr \/ liter<\/strong> for Oloroso Sherry for example, <strong>0.5 gr \/ liter<\/strong> for bourbon. We are far from the <strong>20 gr \/ liter<\/strong> that some add and claim to come from the barrel.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Only casks of <strong>sweet wines<\/strong> such as Porto, Pedro Ximenez, Sauterne or Madeira are actually rather sweet, can actually bring a <strong>trace <\/strong>but in limited quantities.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Moreover, once reduced, this quantity is logically even less. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">As in a whisky, a feeling of <strong>roundness <\/strong>can appear during a barrel of wine, but this is not especially due to residual sugars.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">In addition, the casks arrive of course <strong>empty <\/strong>at Foursquare, it goes well but in some cases elsewhere, it is not always so obvious \ud83d\ude42<\/p>\n\n\n\n<ul class=\"wp-block-gallery columns-2 is-cropped wp-block-gallery-1 is-layout-flex wp-block-gallery-is-layout-flex\"><li class=\"blocks-gallery-item\"><figure><a href=\"http:\/\/leblogaroger.eu\/wp-content\/uploads\/2019\/08\/68717645_766484160448784_3966254057059778560_n.jpg\"><img loading=\"lazy\" decoding=\"async\" width=\"528\" height=\"720\" src=\"http:\/\/leblogaroger.eu\/wp-content\/uploads\/2019\/08\/68717645_766484160448784_3966254057059778560_n.jpg\" alt=\"\" data-id=\"7897\" data-link=\"http:\/\/leblogaroger.eu\/?attachment_id=7897\" class=\"wp-image-7897\"\/><\/a><figcaption>Ex Sauterne cask from Foursquare&#8230;<\/figcaption><\/figure><\/li><li class=\"blocks-gallery-item\"><figure><a href=\"http:\/\/leblogaroger.eu\/wp-content\/uploads\/2019\/08\/69236479_1081103565415052_5054786949563285504_n.jpg\"><img loading=\"lazy\" decoding=\"async\" width=\"528\" height=\"720\" src=\"http:\/\/leblogaroger.eu\/wp-content\/uploads\/2019\/08\/69236479_1081103565415052_5054786949563285504_n.jpg\" alt=\"\" data-id=\"7898\" data-link=\"http:\/\/leblogaroger.eu\/?attachment_id=7898\" class=\"wp-image-7898\"\/><\/a><figcaption>&#8230; and clearly empty for the moment \ud83d\ude42<\/figcaption><\/figure><\/li><\/ul>\n\n\n\n<p class=\"wp-block-paragraph\">For those interested, here is a <a href=\"https:\/\/whiskyscience.blogspot.com\/2016\/12\/sugars-in-whisky.html?fbclid=IwAR2MUYOdgAw4z2D0LwmGVTs8jOowVgqSDWmNB1IDEC_NDF-ALlD6jtAZKFA\" target=\"_blank\" rel=\"noreferrer noopener\" aria-label=\"link  (s\u2019ouvre dans un nouvel onglet)\">link <\/a>to a rather interesting article on this topic.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">So, stop talking, place with rum &#8230; tonight, I propose to you <strong>4 versions<\/strong> of these rums released this year.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Foursquare Empery<\/h2>\n\n\n\n<div class=\"wp-block-image\"><figure class=\"alignleft is-resized\"><a href=\"http:\/\/leblogaroger.eu\/wp-content\/uploads\/2019\/08\/rhum-foursquare-empery.jpg\"><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/leblogaroger.eu\/wp-content\/uploads\/2019\/08\/rhum-foursquare-empery.jpg\" alt=\"\" class=\"wp-image-7799\" width=\"133\" height=\"169\"\/><\/a><figcaption> \u00a9 ExcellenceRhum.com<\/figcaption><\/figure><\/div>\n\n\n\n<p class=\"wp-block-paragraph\">This rum of <strong>14<\/strong> years is, as 99% of cases at Foursquare, a blend of rums from column and still. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Ex <strong>bourbon<\/strong> and ex <strong>Sherry<\/strong>, this version get 56 watts on the counter and will have aged <strong>14<\/strong> years in the cellars of the distillery, in the tropics. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">It is presented in the traditional bottle of the series \u00ab\u00a0<strong>Exceptionnal cask<\/strong>\u00a0\u00bb where we could already find a maturation Porto, Zinfandel, and the famous 1998 vintage among others. Unicorn from Foursquare that <strong>Olivier Scars<\/strong> had the chance to taste <a rel=\"noreferrer noopener\" aria-label=\"here (s\u2019ouvre dans un nouvel onglet)\" href=\"https:\/\/www.whorhumtheworld.com\/blog\/foursquare-1998-vintage-10-ans-40\" target=\"_blank\">here<\/a>)<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Color<\/h4>\n\n\n\n<p class=\"wp-block-paragraph\">Mahogany, nice orangey notes<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Nose<\/h4>\n\n\n\n<p class=\"wp-block-paragraph\">Fruity is the least we can say a lot of <strong>exotic fruits<\/strong> such as slightly peppery <strong>mango<\/strong>, roasted <strong>pineapple<\/strong>, <strong>banana <\/strong>and a hint of <strong>red fruits<\/strong> and sweet <strong>grapes<\/strong>.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The nose is very generous, no doubts, it&rsquo;s a foursquare with a dark <strong>chocolate <\/strong>coated <strong>caramel<\/strong>, <strong>vanilla <\/strong>Bourbon.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The <strong>wood <\/strong>is there, but knows how to stay in its place, we have <strong>tobacco <\/strong>and <strong>nutmeg <\/strong>among others.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The Sherry is discreet, we have here a superb nose, while delicacy that will capsize the amateurs as well as the rum geeks.<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Palate<\/h4>\n\n\n\n<p class=\"wp-block-paragraph\">Lively and warm, less <strong>fruity <\/strong>than the nose could predict.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">There are <strong>more woody notes<\/strong> with tobacco, dark chocolate, some spices and vanilla.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Nevertheless the fruits are a little place in there with the <strong>grapes <\/strong>still.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The alcohol is really well integrated, just enough to avoid falling into something too disgusting.<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Price<\/h4>\n\n\n\n<p class=\"wp-block-paragraph\">69\u20ac<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Conclusion<\/h4>\n\n\n\n<p class=\"wp-block-paragraph\">A <strong>wooded <\/strong>much more marked in the mouth than the nose, sad, I would prefer to find the notes perceived in the nose but it remains a very nice bottling.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">For the price, it really is something super clean, \u00ab\u00a0<strong>easy<\/strong>\u00a0\u00bb and \u2026 yes, <strong>authentic<\/strong>!<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Score<\/h4>\n\n\n\n<p class=\"wp-block-paragraph\">88\/100<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Foursquare 2007<\/h2>\n\n\n\n<div class=\"wp-block-image\"><figure class=\"alignleft is-resized\"><a href=\"http:\/\/leblogaroger.eu\/wp-content\/uploads\/2019\/08\/rhum-foursquare-2007.jpg\"><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/leblogaroger.eu\/wp-content\/uploads\/2019\/08\/rhum-foursquare-2007.jpg\" alt=\"\" class=\"wp-image-7800\" width=\"132\" height=\"167\"\/><\/a><figcaption> \u00a9 ExcellenceRhum.com <\/figcaption><\/figure><\/div>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>59<\/strong> watts and a rum of the <strong>2007<\/strong> vintage this time &#8230; <\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>12<\/strong> years of aging in the tropics, but only in <strong>bourbon<\/strong> casks. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">It is not easy to succeed the <strong>war machines<\/strong> that were 2004 and 2005, I expect a lot of this version! <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Note the pretty <strong>collar <\/strong>that has been added this year &#8230; it adds a certain class to this botlling. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">It does not help, of course, but I find it very important to fine tune a package.<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Color<\/h4>\n\n\n\n<p class=\"wp-block-paragraph\">Mahogany, nice orangey notes<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Nose<\/h4>\n\n\n\n<p class=\"wp-block-paragraph\">As always, warm and generous\u2026<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The <strong>wood <\/strong>first comes in contact with dark <strong>chocolate<\/strong>, roasted <strong>coconut<\/strong>, <strong>pepper<\/strong>, <strong>nutmeg<\/strong>,<strong> <\/strong>vanilla and <strong>tobacco<\/strong>.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Then come <strong>fruits <\/strong>with banana, grapes, red berries, a <strong>floral <\/strong>side comes fragrant all \u2026 All with a little <strong>caramel <\/strong>coulis for the best effect \ud83d\ude0b<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The 59% are very melted and bring some freshness.<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Palate<\/h4>\n\n\n\n<p class=\"wp-block-paragraph\">Again, very <strong>controlled <\/strong>with the heat and the pep ..<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The wood is still there but more discreet than the empery \u2026 <strong>Tobacco <\/strong>and <strong>spices <\/strong>are further back and give more place for dark <strong>chocolate<\/strong>.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Vanilla<\/strong>, sweet <strong>grapes<\/strong>, <strong>mango <\/strong>perfume everything ..<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Once again, the alcohol is really well integrated, it stays alive without being aggressive.<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Price<\/h4>\n\n\n\n<p class=\"wp-block-paragraph\">70\u20ac<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Conclusion<\/h4>\n\n\n\n<p class=\"wp-block-paragraph\">Pwaaaaaa it&rsquo;s good, everything is &lsquo;nice&rsquo; with this 2007 &#8230; Again, a rum of this quality at this price, it&rsquo;s really a good deal.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The signature Foursquare is really present, it&rsquo;s a very <strong>nice <\/strong>rum. <\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Score<\/h4>\n\n\n\n<p class=\"wp-block-paragraph\">89\/100<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Foursquare Patrimonio<\/h2>\n\n\n\n<div class=\"wp-block-image\"><figure class=\"alignleft is-resized\"><a href=\"http:\/\/leblogaroger.eu\/wp-content\/uploads\/2019\/08\/rhum-foursquare-patrimonio.jpg\"><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/leblogaroger.eu\/wp-content\/uploads\/2019\/08\/rhum-foursquare-patrimonio.jpg\" alt=\"\" class=\"wp-image-7804\" width=\"126\" height=\"159\"\/><\/a><figcaption> \u00a9 ExcellenceRhum.com <\/figcaption><\/figure><\/div>\n\n\n\n<p class=\"wp-block-paragraph\">Latest version proposed by <strong>Velier<\/strong>, the Patrimonio is the result of <strong>14 <\/strong>years of double aging in bourbon and sherry casks and grading &#8230; 58%? <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Well, it&rsquo;s starting to decrease in voltage at Velier, no worse \ud83d\ude42<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">This one has an ID card very close to the Empery, you just have to see the proportions of bourbon \/ sherry maturation are the same. If so, just 2 small degrees should slightly change the profile or not &#8230; <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">So, this tasting is really interesting, just to see if this bottling deserves its \u00ab\u00a0little\u00a0\u00bb ticket of 100 \u20ac more \ud83d\ude42<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Color<\/h4>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Darker <\/strong>than the two above, we are more on the brown than the mahogany \u2026<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Nose<\/h4>\n\n\n\n<p class=\"wp-block-paragraph\">Not so close as that of the Empery, including less fruit, a <strong>more present alcohol<\/strong> and a more sweet side. The juice seems bolder and heavier.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">With time the woods take more space with a more <strong>rustic <\/strong>side, austere than his &lsquo;brother&rsquo;.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Tobacco, spices and much more <strong>black pepper<\/strong> and nutmeg slightly hide the fruity flavors I expected.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Ouch, yes really, the more time passes and the more rum becomes <strong>woody<\/strong>, less sexy than what foursquare can be.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The alcohol is present, more <strong>sharp <\/strong>and not well balanced I think.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Well, it&rsquo;s really exciting me not too much \u2026<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Palate<\/h4>\n\n\n\n<p class=\"wp-block-paragraph\">Alcohol is lively, <strong>disturbing <\/strong>with a fairly straightforward attack.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The wood comes directly with a slight <strong>astringency <\/strong>and some <strong>spices <\/strong>here and there including pepper and nutmeg as well as tobacco.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">A <strong>smoked <\/strong>veil, <strong>burnt caramel<\/strong> comes then add an extra layer to this set for the least <strong>robust<\/strong>.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The wood is very much present in this version \u2026 It&rsquo;s much more <strong>hardcore <\/strong>and it&rsquo;s not too much that I expect a Foursquare actually.<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Price<\/h4>\n\n\n\n<p class=\"wp-block-paragraph\">179\u20ac<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Conclusion<\/h4>\n\n\n\n<p class=\"wp-block-paragraph\">It&rsquo;s tense we say, incisive and not very sexy even if we still recognize the Foursquare affiliation. It&rsquo;s more \u00ab\u00a0rude\u00a0\u00bb I would say \u2026 less presentable in family \ud83d\ude42<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Disappointment, clearly this rum is not very balanced. Personally I would have called it \u00ab\u00a0<strong>Robustas<\/strong>\u00ab\u00a0<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Score<\/h4>\n\n\n\n<p class=\"wp-block-paragraph\">83\/100<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Foursquare Destino<\/h2>\n\n\n\n<div class=\"wp-block-image\"><figure class=\"alignleft is-resized\"><a href=\"http:\/\/leblogaroger.eu\/wp-content\/uploads\/2019\/08\/rhum-velier-foursquare-destino.jpg\"><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/leblogaroger.eu\/wp-content\/uploads\/2019\/08\/rhum-velier-foursquare-destino.jpg\" alt=\"\" class=\"wp-image-7803\" width=\"139\" height=\"175\"\/><\/a><figcaption> \u00a9 ExcellenceRhum.com <\/figcaption><\/figure><\/div>\n\n\n\n<p class=\"wp-block-paragraph\">Place to the bottler Velier and its \u00ab\u00a0official\u00a0\u00bb version of Foursquare .. indeed, according to Richard Seale, it is indeed official bottling for its Italian importer. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Here we&rsquo;ve got a maturation in ex barrel of <strong>Madeira<\/strong> (12 years) and <strong>bourbon<\/strong> (2 years). <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">This gives us a <strong>2003<\/strong> vintage for <strong>14<\/strong> years of aging and would, according to what is said, exactly the same as the destino of the 70-year-old Velier. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">At <strong>61%<\/strong>, this version is hotter than the previous two (as is often the case with Velier)<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Color<\/h4>\n\n\n\n<p class=\"wp-block-paragraph\">Mahogany dark and very <strong>oily<\/strong>, really  really oily\u2026<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Nose<\/h4>\n\n\n\n<p class=\"wp-block-paragraph\">Back to <strong>fruit <\/strong>and something much more <strong>sexy <\/strong>and Foursquare \u2026<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The nose is rather sweet compared to 61%, it&rsquo;s really well balanced<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The fruits are represented by a beautiful <strong>big cherry<\/strong>, <strong>red <\/strong>fruits, <strong>banana <\/strong>and a touch of <strong>vanilla<\/strong>.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The wood is there, giving strength to this rum without making it too hard. To me, mid way <strong>between fruits and wood<\/strong>, rather balanced.<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Palate<\/h4>\n\n\n\n<p class=\"wp-block-paragraph\">Oily, rich and warm, the 61% are much more melted than the 58 of the previous one.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Fruits are always present, the <strong>cherry is more amarena<\/strong>, <strong>sweet <\/strong>\u2026 The <strong>banana <\/strong>is well cooked but these fruits quickly disappear in favor of more <strong>tertiary <\/strong>flavors.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The wood is well represented, especially on the finish with a nice touch of <strong>chocolate<\/strong>, <strong>tobacco<\/strong>, <strong>nutmeg<\/strong>, powerful without being invasive.<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Price<\/h4>\n\n\n\n<p class=\"wp-block-paragraph\">189\u20ac<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Conclusion<\/h4>\n\n\n\n<p class=\"wp-block-paragraph\">This version seems to me less sickening than the version \u00ab\u00a070 years\u00a0\u00bb, I prefer it to this one.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">A nice Foursquare that <strong>combines fruit and woody<\/strong> all at a relatively high but clearly balanced.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">I like it but the <strong>sweet <\/strong>side may have a tendency to disgust me with time.<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Score<\/h4>\n\n\n\n<p class=\"wp-block-paragraph\">87\/100<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Return of the concept of \u00ab\u00a0Some kind of &#8230;\u00a0\u00bb with Part II and its 100% Foursquare linup &#8230; Other distilleries will soon be available of course.
