Trois rhums que j&rsquo;aurais d\u00e9gust\u00e9 en trois soirs, tellement leur profil est exub\u00e9rant&#8230; Bref, j&rsquo;ai fait un article sur des<strong> rhums high esters blancs<\/strong> (les rhums, pas les esters hein) et \u00e7a pue dans mon salon \ud83d\ude05<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Bon alors, c&rsquo;est quoi un <strong>rhum High Esters<\/strong> ? Pas facile comme question car cela implique pas mal de choses, mais en gros ce sera un rhum dont le <strong>profil aromatique<\/strong> est particuli\u00e8rement <strong>riche<\/strong>.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Comme j&rsquo;ai pas sp\u00e9cialement envie d&rsquo;expliquer le comment du pourquoi, je vous renvoi sur l&rsquo;excellent article de <a aria-label=\"Nico (s\u2019ouvre dans un nouvel onglet)\" href=\"http:\/\/coeur-de-chauffe.blogspot.com\/2017\/02\/le-rhum-grand-arome-ou-high-ester.html\" target=\"_blank\" rel=\"noreferrer noopener\">Nico<\/a> et vers l&rsquo;article sur les rhums Jama\u00efcains de <a aria-label=\"Cyril (s\u2019ouvre dans un nouvel onglet)\" href=\"https:\/\/durhum.com\/le-rhum-jamaicain\/\" target=\"_blank\" rel=\"noreferrer noopener\">Cyril<\/a>. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Ces deux articles vous expliqueront en gros que ces profils hypers aromatiques proviennent d&rsquo;une <strong>longue fermentation<\/strong> et d&rsquo;ajout de \u00ab\u00a0<strong>vinasse<\/strong>\u00a0\u00bb (r\u00e9sidu de distillation et d&rsquo;autres brols) afin de faire ressortir le plus de composants non alcool (dont les composants aromatiques) apr\u00e8s distillation. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Ces composants \u00e9tant capt\u00e9s par le ma\u00eetre distillateur, personne au r\u00f4le bien entendu plus que primordial !<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Voila pour la partie \u00ab\u00a0technique\u00a0\u00bb&#8230; en gros, retenez qu&rsquo;un rhum high esters sera avant tout un rhums tr\u00e8s <strong>exub\u00e9rants<\/strong>. Ces spiritueux venant principalement de Jama\u00efque, de la r\u00e9union et de Martinique (1 distillerie) entre autre.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Au menu de ce soir, un <strong>Hampden <\/strong>&lt;&gt;H, un <strong>Savanna <\/strong>Lontan et un <strong>Gallion <\/strong>grand ar\u00f4me&#8230; Allez, \u00e7a s&rsquo;annonce rude, force et courage !! \ud83d\ude42 <\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Hampden &lt;&gt; H<\/h3>\n\n\n\n<div class=\"wp-block-image\"><figure class=\"alignleft is-resized\"><a href=\"http:\/\/leblogaroger.eu\/wp-content\/uploads\/2019\/08\/m55412_1.jpg\"><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/leblogaroger.eu\/wp-content\/uploads\/2019\/08\/m55412_1.jpg\" alt=\"\" class=\"wp-image-7588\" width=\"114\" height=\"150\"\/><\/a><\/figure><\/div>\n\n\n\n<p class=\"wp-block-paragraph\">Embouteillage sp\u00e9cial pour le <strong>Whisky Live<\/strong>, cet Hampden &lt;&gt;H de chez nos copains d&rsquo;<strong>Habitation Velier<\/strong> est un rhum \u00ab\u00a0high esters\u00a0\u00bb dont le taux d&rsquo;esters se situe juste en dessous du HLCF pour ceux qui connaissent (960gr\/hlpa). <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Donc en gros, \u00e7a fouette \ud83d\ude42<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Titrant 66%, ce rhum blanc n&rsquo;est pas \u00e0 mettre entre toutes les mains&#8230;<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Nez<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">Colle <strong>patex<\/strong>, <strong>solvant<\/strong>, <strong>fruits <\/strong>bien pass\u00e9s, <strong>olives <\/strong>en saumure.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">C&rsquo;est salin, d\u00e9j\u00e0 <strong>fum\u00e9 <\/strong>et <strong>animal<\/strong>&#8230; \u00c7a ferait limite penser \u00e0 un <strong>morceau de viande crue<\/strong>. Oui je sais, c&rsquo;est sp\u00e9cial mais c&rsquo;est comme \u00e7a que je le vois \ud83d\ude05<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Sinon pour le reste, pas grand chose d&rsquo;autre en fait\u2026 les 66% sont \u00e9trangement discrets.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Bouche<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">De la grosse <strong>olive <\/strong>verte, encore saumur\u00e9 et moins de fruits que ce \u00e0 quoi je m&rsquo;attendais m\u00eame si on peut y retrouver une forme de vinaigre \u00e0 la <strong>framboise<\/strong>&#8230;<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Par contre c&rsquo;est vraiment <strong>buvable<\/strong>, et \u00e7a je ne m&rsquo;y attendais pas dutout ! Les 66% ne cognent vraiment pas, limite doux et cr\u00e9meux.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">On y retrouve des traces de noix et d&rsquo;olive sur la longueur assez folle de ce truc&#8230; Vraiment bluffant.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Une l\u00e9g\u00e8re sucrosit\u00e9 est \u00e9galement de la partie et ajoute un touche gourmande \u00e0 la d\u00e9gustation.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Prix<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">+-60\u20ac<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Conclusion<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">Je m&rsquo;attendais \u00e0 un truc <strong>diabolique <\/strong>et <strong>imbuvable<\/strong>, je suis assez \u00e9tonn\u00e9 du r\u00e9sultat m\u00eame si je ne me verrai pas avec 70cl chez moi.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">C&rsquo;est <strong>sympa<\/strong>, mais \u00e7a reste tout de m\u00eame quelque chose de difficile \u00e0 d\u00e9guster tranquille&#8230;<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Score<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">79\/100<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Savanna Lontan (lmdw)<\/h2>\n\n\n\n<div class=\"wp-block-image\"><figure class=\"alignleft is-resized\"><a href=\"http:\/\/leblogaroger.eu\/wp-content\/uploads\/2019\/08\/m51945.jpg\"><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/leblogaroger.eu\/wp-content\/uploads\/2019\/08\/m51945.jpg\" alt=\"\" class=\"wp-image-7591\" width=\"122\" height=\"163\" srcset=\"https:\/\/leblogaroger.eu\/wp-content\/uploads\/2019\/08\/m51945.jpg 675w, https:\/\/leblogaroger.eu\/wp-content\/uploads\/2019\/08\/m51945-480x640.jpg 480w, https:\/\/leblogaroger.eu\/wp-content\/uploads\/2019\/08\/m51945-595x793.jpg 595w\" sizes=\"auto, (max-width: 122px) 100vw, 122px\" \/><\/a><\/figure><\/div>\n\n\n\n<p class=\"wp-block-paragraph\">Encore une exclusivit\u00e9 pour La maison du Whisky, qui d\u00e9cid\u00e9ment aiment proposer des trucs qui d\u00e9chaussent les dents, ce <strong>Savanna <\/strong>est un grand ar\u00f4me dont la dur\u00e9e de <strong>fermentation  <\/strong>est particuli\u00e8rement longue&#8230; <strong>15 jours<\/strong> ! (l\u00e0 o\u00f9 les rhums agricoles AOC fermentent 72 heures max)<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Titrant <strong>57%<\/strong>, celui ci est d\u00e9j\u00e0 plus civilis\u00e9 que l&rsquo;autre sauvage d\u00e9crit au dessus\u2026 Limit\u00e9 \u00e0 1000 bouteilles.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Nez<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Eurk<\/strong>\u2026. <strong>olive verte<\/strong>, tapenade <strong>d&rsquo;anchois<\/strong>, <strong>saumure<\/strong>, amertume et colle <strong>patex<\/strong>&#8230;<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Vraiment, pas engageant ce truc. Laissons lui un peu de temps histoire de voir si \u00e7a change ou pas.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Le temps nous laisse un nez plus <strong>cr\u00e9meux <\/strong>mais toujours domin\u00e9 par cet aspect saumure\/colle. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Les fruits ? je le cherche toujours et j&rsquo;ai peine \u00e0 d\u00e9celer plus de choses que le <strong>citron <\/strong>en fait.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Bouche<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">Re <strong>eeuuurk<\/strong>, \u00ab\u00a0<em>eau de vie d&rsquo;olives vertes saumur\u00e9es<\/em>\u00ab\u00a0\u2026 c&rsquo;est purement <strong>inf\u00e2me <\/strong>ce truc en fait !<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Je retente une seconde gorg\u00e9e\u2026. arf, non vraiment \u00e7a ne va pas dutout. On retrouve plus de sucrosit\u00e9 en deuxi\u00e8me bouche mais \u00e7a reste bien trop olives vertes\/anchois. M\u00eame si le <strong>citron <\/strong>bien confit n&rsquo;est pas loin, \u00e7a reste hyper am\u00e8re et tout sauf plaisant.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Les 57% sont tr\u00e8s bien int\u00e9gr\u00e9s.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Prix<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">+-50\u20ac<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Conclusion<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">Je ne comprend pas qu&rsquo;on ose embouteiller ce genre de choses, vraiment pour moi il n&rsquo;y a aucun plaisir l\u00e0 dedans.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Certes c&rsquo;est un <strong>ovni<\/strong>, mais franchement je me trouve tr\u00e8s con avec les 68 cl qui me restent du coup. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Certains on ador\u00e9, personnellement je ne comprend pas l&rsquo;int\u00e9r\u00eat.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Score<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">30\/100<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Latitude Grand Ar\u00f4me de la Baie du Gallion<\/h2>\n\n\n\n<div class=\"wp-block-image\"><figure class=\"alignleft is-resized\"><a href=\"http:\/\/leblogaroger.eu\/wp-content\/uploads\/2019\/08\/latitudes-grand-arme-de-la-baie-du-galion-60.jpg\"><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/leblogaroger.eu\/wp-content\/uploads\/2019\/08\/latitudes-grand-arme-de-la-baie-du-galion-60-960x960.jpg\" alt=\"\" class=\"wp-image-7751\" width=\"134\" height=\"134\" srcset=\"https:\/\/leblogaroger.eu\/wp-content\/uploads\/2019\/08\/latitudes-grand-arme-de-la-baie-du-galion-60-960x960.jpg 960w, https:\/\/leblogaroger.eu\/wp-content\/uploads\/2019\/08\/latitudes-grand-arme-de-la-baie-du-galion-60-595x595.jpg 595w, https:\/\/leblogaroger.eu\/wp-content\/uploads\/2019\/08\/latitudes-grand-arme-de-la-baie-du-galion-60-768x768.jpg 768w, https:\/\/leblogaroger.eu\/wp-content\/uploads\/2019\/08\/latitudes-grand-arme-de-la-baie-du-galion-60-300x300.jpg 300w, https:\/\/leblogaroger.eu\/wp-content\/uploads\/2019\/08\/latitudes-grand-arme-de-la-baie-du-galion-60.jpg 1664w\" sizes=\"auto, (max-width: 134px) 100vw, 134px\" \/><\/a><\/figure><\/div>\n\n\n\n<p class=\"wp-block-paragraph\">Derni\u00e8re trouvaille de notre ami <strong>Nico<\/strong>, ce grand ar\u00f4me est l&rsquo;unique disponible en Martinique et est issue de la sucrerie du <strong>Grand Gallion<\/strong>.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Il est le fruit de la distillation de m\u00e9lasse et de vinasse ferment\u00e9e. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">A noter qu&rsquo;il n&rsquo;y a pas d&rsquo;ajout de levures pour la fermentation, uniquement la vinasse. C&rsquo;\u00e9tait une technique relativement r\u00e9pandue vers <strong>1900<\/strong> dans toute la Martinique&#8230;<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Nez<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Fruits <\/strong>tr\u00e8s m\u00fbrs, <strong>olives <\/strong>vertes, <strong>solvant <\/strong>et un c\u00f4t\u00e9 <strong>sucr\u00e9<\/strong>&#8230;<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Le fruits tourne \u00e0<strong> fruits confits<\/strong>, genre grosse cerise <strong>amarena<\/strong>&#8230; Le nez est tr\u00e8s riche, tr\u00e8s gourmand et limite <strong>liquoreux<\/strong>.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Le c\u00f4t\u00e9 aust\u00e8re du premier nez, animal\/fum\u00e9, saumur\u00e9 dispara\u00eet assez vite pour laisser cet aspect liquoreux, avec limite un c\u00f4t\u00e9 <strong>amareto<\/strong> et ses amandes.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Tr\u00e8s tr\u00e8s riche&#8230; <strong>Trop <\/strong>? <strong>Probablement pour moi<\/strong>, je suis moins dans ce trip mais c&rsquo;est tr\u00e8s int\u00e9ressant.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">L&rsquo;alcool est hyper rond, c&rsquo;est plut\u00f4t bien int\u00e9gr\u00e9.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Bouche<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">Plus vif, assez eau de vie de <strong>cerise <\/strong>je dirais&#8230; C&rsquo;est tr\u00e8s <strong>fruit\u00e9<\/strong>, <strong>liquoreux <\/strong>mais avec le <strong>peps <\/strong>des 60 watts<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>L&rsquo;olive <\/strong>est toujours de la partie et vient ajouter une couche am\u00e8re, iod\u00e9e \u00e0 ce panier de<strong> fruits au sirop de canne<\/strong> &#8230; <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">C&rsquo;est \u00e9tonnant cette sucrosit\u00e9, cela ajoute un couche bien grasse \u00e0 ce m\u00e9lange de <strong>fruits exotiques \/olives<\/strong>. Du coup la bouche est plut\u00f4t douce pour un alcool \u00e0 60%<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Tr\u00e8s bien mais quelque peu <strong>\u00e9coeurant <\/strong>\u00e0 la longue du coup.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Prix<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">48.9\u20ac<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Conclusion<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">Int\u00e9ressant mais pas ma came&#8230; Apr\u00e8s, pour un rhum high esters, je le trouve nettement <strong>moins sauvage<\/strong> que ce que je pensais, limite plaisir mais \u00e7a reste un truc assez hard \u00e0 d\u00e9guster \ud83d\ude00<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Score<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">79\/100<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Conclusion<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Vraiment, j&rsquo;ai du mal \u00e0 comprendre pourquoi certains prennent ces rhums en <strong>d\u00e9gustation pure<\/strong>&#8230; Je pense que cela est principalement fait pour faire des <strong>cocktails <\/strong>ou pour donner du peps \u00e0 des <strong>assemblages<\/strong>.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Je sais que pas mal de monde aime ces profils, donc ils seront ravis avec le <strong>Latitude <\/strong>et le <strong>Hampden<\/strong>, mais pour les autres&#8230;. \u00ab\u00a0<em>Fuyez pauvres fous<\/em>\u00a0\u00bb !! \ud83d\ude42 \ud83d\ude42 <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Et de fait, il existe sur le march\u00e9 pas mal d&rsquo;autres rhums de ce type, mais je n&rsquo;ai pas le courage de les go\u00fbter \ud83d\ude42 <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Pour ce qui est des scores, j&rsquo;ai vraiment h\u00e9sit\u00e9 \u00e0 en mettre tellement le c\u00f4t\u00e9 subjectif entre en ligne de compte pour ce genre de produits.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Avec ces rhums, on d\u00e9teste ou on adore.. clairement.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Donc je n&rsquo;aurais qu&rsquo;une chose \u00e0 vous dire, <strong>testez <\/strong>(en sample ou chez un caviste, un copain)<strong> <\/strong>!
