Apr\u00e8s une superbe fine d’Alsace<\/a>, Aur\u00e9lien nous revient avec 3 nouveaux amateurs\/passionn\u00e9s et une nouvelle s\u00e9lection pour Amateur Spirit. Et cette fois ci, nous repartons pour la Gascogne avec un armagnac \u00e2g\u00e9 de 40 ans, et venant de la ferme de Sabine Dulhoste<\/strong>.<\/p>\n\n\n\n

Fond\u00e9 en 1927 <\/strong>par son grand p\u00e8re, ce domaine cultive principalement le c\u00e9page du baco <\/strong>et produit ses propres eaux de vie gr\u00e2ce \u00e0 un bouilleur de cru ambulant. Les moyens financiers de l’\u00e9poque ne permettaient malheureusement pas de distiller r\u00e9guli\u00e8rement.<\/p>\n\n\n\n

Apr\u00e8s la guerre 1940-1945, \u00e0 son retour d’Allemagne, son p\u00e8re a rejoint le domaine, et tous les deux ont perp\u00e9tu\u00e9 la tradition familiale.<\/p>\n\n\n\n

Enfin, en 1974 <\/strong>Sabine et son mari on commenc\u00e9 le travail, et l’exploitation agricole familiale \u00e9tant leur priorit\u00e9, ils ont contribu\u00e9s \u00e0 l’\u00e9volution du stock et particip\u00e9s aux distillations suivantes.. Au d\u00e9c\u00e8s de son p\u00e8re, elle h\u00e9rite du chai d’armagnac qu’elle met en bouteille pour notre plus grand bonheur.<\/p>\n\n\n\n

Concernant ce mill\u00e9sime, nous sommes donc sur un armagnac 100% baco, distill\u00e9 en 1984 <\/strong>et vieilli sous ch\u00eane depuis lors. <\/p>\n\n\n\n

Sabine est d’ailleurs tr\u00e8s pointilleuse sur les f\u00fbts de ch\u00eane dans lesquels elle fait vieillir ses Armagnacs. Cet embouteillage \u00e0 donc b\u00e9n\u00e9fici\u00e9 d’un f\u00fbt de ch\u00eanes de la propri\u00e9t\u00e9<\/strong>, fabriqu\u00e9s par des artisans tonneliers locaux. Ce n’est pas une pratique exceptionnelle, mais elle reste quand m\u00eame assez rare et m\u00e9rite d’\u00eatre soulign\u00e9e. D’o\u00f9 l’\u00e9tiquette choisie par Aur\u00e9lien d’ailleurs.<\/p>\n\n\n\n

Pour la quatri\u00e8me \u00e9dition, le jury amateur \u00e9tait compos\u00e9 de Chris Bobby<\/strong>, Pavel Spacek<\/strong> et Djurre Van Kouwen<\/strong> et on s\u00e9lectionn\u00e9 cette eau de vie titrant 52.9%<\/strong> d’alcool.<\/p>\n\n\n\n

Nez<\/h2>\n\n\n\n

Tr\u00e8s chaleureux, ce vieil armagnac a bien \u00e9t\u00e9 impr\u00e9gn\u00e9 par les ar\u00f4mes bois\u00e9s du f\u00fbt de ch\u00eane du domaine, on va retrouver une tr\u00e8s belle concentration d’ar\u00f4mes tant\u00f4t fruit\u00e9s, tant\u00f4t bois\u00e9s.<\/p>\n\n\n\n

Un l\u00e9ger vernis nous accueille avec une belle marmelade de fruits confits comme les abricots, dattes, pruneaux, cerise kirsch, raisins secs, pomme cuite. A cela viendra se joindre les noix et noisettes torr\u00e9fi\u00e9es et l\u00e9g\u00e8rement caram\u00e9lis\u00e9es, le miel, le chocolat noir, le tabac, la vanille, le cuir.<\/p>\n\n\n\n

Avec le temps, ce dernier devient plus frais avec quelques traces d’agrumes, de colle, de sauce soja, de vinaigre balsamique, citron confit.<\/p>\n\n\n\n

Le profil est chaud, brioch\u00e9 et r\u00e9confortant… je me vois bien au coin du feu en train de d\u00e9guster ce tr\u00e8s vieil armagnac, durant les longues soir\u00e9es d’hiver, ou en fin de raclette avec des amis proches \ud83d\ude0d<\/p>\n\n\n\n

Bouche<\/h2>\n\n\n\n

La bouche est plus sombre, sur la poudre de chocolat noir, les noix, noisettes, pruneaux, dattes, abricots, raisins secs, tabac, r\u00e9glisse, vanille, cuir.<\/p>\n\n\n\n

Ensuite, un caramel tr\u00e8s gourmand, du nougat avec du chocolat au lait fondu vient enrober tout ce qui pr\u00e9c\u00e8de pour rendre le tout assez homog\u00e8ne<\/p>\n\n\n\n

Sur la fin de bouche, nous avons une petite pointe plus acide avec le citron confit et les fruits secs torr\u00e9fi\u00e9s qui viennent nous saluer. L’alcool est tr\u00e8s bien int\u00e9gr\u00e9, c’est tr\u00e8s \u00e9quilibr\u00e9 et ne manque pas de peps.<\/p>\n\n\n\n
