Voila en gros ma r\u00e9action quand j&rsquo;ai vu l&rsquo;annonce de ces vieux Clairin et Hampden vieillis en ex f\u00fbt de Sherry de chez <a href=\"https:\/\/lustau.es\/en\/coleccion\/sherry-wines,solera-familiar-en\/oloroso-don-nuno\/\" target=\"_blank\" rel=\"noreferrer noopener\">Lustau<\/a>, bodega qui produit des Xeres depuis 1896. Car les finitions ou vieillisements int\u00e9grals en ex Sherry, c&rsquo;est assez courant et historique et \u00e7a fait de tr\u00e8s belles choses, mais <strong>pas <\/strong>dans le monde du rhum <em>(hormis quelques finitions ci et l\u00e0)<\/em>. Non, c&rsquo;est clairement plus vers l&rsquo;univers du Whisky qu&rsquo;il faut regarder pour trouver cela.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Mais au final, ce n&rsquo;est effectivement pas en pensant ainsi qu&rsquo;on avance, alors pourquoi pas tenter le coup ! Donc, curieux je suis et je m&#8217;empresse de trouver quelques samples histoire de tester tout cela.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Le hic avec le Sherry, c&rsquo;est que pour \u00eatre transport\u00e9 et pour \u00e9viter que des bact\u00e9ries ne se d\u00e9veloppent durant le transport, on m\u00e8che les f\u00fbts aux souffre. En gros, on les cr\u00e2me et les vapeurs de gaz sulfureux vont alors tuer les bact\u00e9ries pr\u00e9sentes. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Par contre, le souffre \u00e7a a une odeur et un go\u00fbt, et c&rsquo;est donc pas toujours g\u00e9nial pour le spiritueux qui va \u00eatre sa tronche dedans durant quelques ann\u00e9es&#8230; \u00e7a peut vite partir en vrille quoi \ud83d\ude42<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Voyons voir ce que cela donne sur des rhums si frais, fruit\u00e9s et atypiques&#8230;.<\/p>\n\n\n\n<figure class=\"wp-block-gallery has-nested-images columns-default is-cropped wp-block-gallery-1 is-layout-flex wp-block-gallery-is-layout-flex\">\n<figure class=\"wp-block-image size-large\"><img loading=\"lazy\" decoding=\"async\" width=\"711\" height=\"470\" data-id=\"15183\" src=\"https:\/\/leblogaroger.eu\/wp-content\/uploads\/2022\/05\/sherry-2.png\" alt=\"\" class=\"wp-image-15183\" srcset=\"https:\/\/leblogaroger.eu\/wp-content\/uploads\/2022\/05\/sherry-2.png 711w, https:\/\/leblogaroger.eu\/wp-content\/uploads\/2022\/05\/sherry-2-595x393.png 595w, https:\/\/leblogaroger.eu\/wp-content\/uploads\/2022\/05\/sherry-2-91x60.png 91w\" sizes=\"auto, (max-width: 711px) 100vw, 711px\" \/><\/figure>\n<\/figure>\n\n\n\n<h3 class=\"wp-block-heading\">Vieux Sajous 4 ans 56.7%<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">Clairin Sajous ayant s\u00e9journ\u00e9 4 ans en ex f\u00fbts Olorosso et titrant 56.7%. <\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Nez<\/h4>\n\n\n\n<p class=\"wp-block-paragraph\">Les premiers ar\u00f4mes qui se d\u00e9gagent de ce nez seraient du c\u00f4t\u00e9 du raisin en fait, \u00e7a sent assez bien le raisin sec bien gorg\u00e9 de soleil pour ensuite nous proposer des pointes d&rsquo;artichaut, de chocolat, de mocha, de sucre brun, de cassis, de fraises et d&rsquo;\u00e9pices. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Un c\u00f4t\u00e9 souffr\u00e9\/poudre \u00e0 canon est aussi \u00e0 noter, ce n&rsquo;est pas \u00e9crasant mais il y&rsquo;en a quand m\u00eame. Dommage pour cette odeur pas tr\u00e8s sexy d&rsquo;artichaut en fait.<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Bouche<\/h4>\n\n\n\n<p class=\"wp-block-paragraph\">Un nez assez torrifi\u00e9 et chocolat\u00e9 o\u00f9 vont s&rsquo;ajouter des notes plus herbac\u00e9es. L&rsquo;olive verte ne tarde pas \u00e0 faire son apparition avec quelques expressions plus fruit\u00e9es et toujours ce l\u00e9ger c\u00f4t\u00e9 artichaut par hyper glamour. Enfin, le raisin bien sucr\u00e9 est \u00e9videmment de la partie.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">C&rsquo;est plut\u00f4t gourmand, le chocolat noir et le sucre brun aidant bien mais cet melting pot ne prend pas trop je trouve. C&rsquo;est bien d\u00e9s\u00e9quilibr\u00e9 et \u00e7a part un peu trop dans tous les sens pour moi. Et cet artichaut\/olives est vraiment d\u00e9plaisant.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Ajoutez \u00e0 tout cela un c\u00f4t\u00e9 souffr\u00e9 et vous obtenez ce que je consid\u00e8re comme un mariage r\u00e2t\u00e9, dommage.  <\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Prix<\/h4>\n\n\n\n<p class=\"wp-block-paragraph\">79\u20ac<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Conclusion<\/h4>\n\n\n\n<p class=\"wp-block-paragraph\">Bof bof, cette association n&rsquo;est pas vraiment heureuse et cela me conforte dans l&rsquo;id\u00e9e que les clairins ne sont pas sens\u00e9s passer en f\u00fbts. Embouteill\u00e9 \u00e0 50.4% sp\u00e9cialement pour le Whisky Live 2021.<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Nez<\/h4>\n\n\n\n<p class=\"wp-block-paragraph\">Le nez semble moins lourd que sur le Sajous. On y trouve plus de fruit\u00e9 et les notes torrifi\u00e9es me paraissent bien plus calmes.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Pas mal de fruits exotiques avec lesquels se mellent du miel et une belle rasade d&rsquo;agrumes. Ce nez est bien plus agr\u00e9able et parfum\u00e9, l\u00e0 o\u00f9 le Sajous \u00e9taient tout en lourdeur. C&rsquo;est bien plus \u00e9l\u00e9gant en fait, m\u00eame si une l\u00e9g\u00e8re pointe d&rsquo;artichaut est toujours de la partie.<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Bouche<\/h4>\n\n\n\n<p class=\"wp-block-paragraph\">La bouche revient assez vite sur l&rsquo;olive \/ artichaut, pas mal d&rsquo;agrumes ainsi que de vanille, du camphre et des herbes aromatiques. Un fin bois\u00e9 est de la partie mais ce rhum reste relativement frais et v\u00e9g\u00e9tal. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">A croire que le combo Vaval\/Casimir r\u00e9siste mieux au f\u00fbt, ou que ce dernier avait \u00e9t\u00e9 bien lav\u00e9 avant enfutage car les notes souffr\u00e9es sont tout de m\u00eames nettement moins pr\u00e9sentes.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">On constate une belle sucrosit\u00e9 aussi dans ce blend et la finale nous offre un beau chocolat au lait.<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Prix<\/h4>\n\n\n\n<p class=\"wp-block-paragraph\">79\u20ac<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Conclusion<\/h4>\n\n\n\n<p class=\"wp-block-paragraph\">L&rsquo;association me semble plus agr\u00e9able sur cette derni\u00e8re version m\u00eame si on ne peut pas vraiment dire que je sois totalement tomb\u00e9 sous le charme en fait. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Le c\u00f4t\u00e9 herbes de provences, olives, agrumes n&rsquo;est vraiment pas un assemblage qui m&rsquo;excite plus que cela. Aucune id\u00e9e des marks nons plus&#8230; bref, on sait pas grand chose hormis qu&rsquo;il n&rsquo;y en a plus. <\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Nez<\/h4>\n\n\n\n<p class=\"wp-block-paragraph\">On retrouve assez bien Hampden, avec des notes de solvants, olives, artichauts<em> (d\u00e9cid\u00e9ment)<\/em>, agrumes confits mais avec pas mal d&rsquo;\u00e9pices, du miel, du chocolat et un beau beurr\u00e9.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Encore une fois, cette olive\/artichaut me g\u00eane un peu malheureument. A l&rsquo;a\u00e9ration, on se retrouve plus avec des notes torr\u00e9fi\u00e9es, de fruits secs, de r\u00e9glisse, de dattes et de raisins bien sucr\u00e9es.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">L&rsquo;alcool est plut\u00f4t sweet, rien ne d\u00e9passe de trop&#8230;<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Bouche<\/h4>\n\n\n\n<p class=\"wp-block-paragraph\">La bouche est bien marqu\u00e9e Hampden mais avec quelque chose plus inhabituel en fait&#8230; Nous avons un beau fum\u00e9, de l&rsquo;olive, du cacoa, du miel, fraises, du caramel, du caf\u00e9&#8230; c&rsquo;est vraiment tr\u00e8s mark\u00e9<em> ( \ud83d\ude00 )<\/em> <a href=\"https:\/\/www.lecomptoirdulys.com\/603-large_default\/mokatine-caramella.jpg\">mochatine <\/a>en fait cette petite chose. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">On retrouve bien Hampden, avec le temps la banane arrive m\u00eame \u00e0 resortir de tout cela mais effectivement, le f\u00fbt \u00e0 bien transform\u00e9 le spiritueux inital. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Il aurait \u00e9t\u00e9 int\u00e9ressant de voir ce qu&rsquo;un long vieillissement en f\u00fbt de bourbon classique aurait donn\u00e9 avec 1-2 ans de finitions dans ce genre de f\u00fbt en fait.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Les 52% sont plus vifs et anguleux que ce que le nez pouvait laisser penser, j&rsquo;imagine un Hampden relativement jeune mais l\u00e9g\u00e8rement arrondis par le Sherry. Mais \u00e7a reste plut\u00f4t r\u00eache comme spiritueux. <\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Prix<\/h4>\n\n\n\n<p class=\"wp-block-paragraph\">79\u20ac<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Conclusion<\/h4>\n\n\n\n<p class=\"wp-block-paragraph\">Ici, je dirais que l&rsquo;association est la plus r\u00e9ussie de ces trois tests de Velier. Peut \u00eatre que le Hampden r\u00e9siste mieux \u00e0 ce genre d&rsquo;exp\u00e9rience.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Apr\u00e8s, est ce que cela en fait un rhum d&rsquo;exception ? non, clairement pas. Est ce que Hampden avait besoin de ce genre de traitement? Je ne pense pas trop non plus en fait.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">A voir apr\u00e8s ce que ce genre de choses pourraient donner dans des assemblages, comme dans le <a href=\"https:\/\/leblogaroger.eu\/index.php\/2022\/04\/24\/papalin-2022\/\" target=\"_blank\" rel=\"noreferrer noopener\">Papalin <\/a>par exemple. Franchement je ne pense pas, m\u00eame si pour les deux Clairin, je ne suis d\u00e9ja pas hyper fan des profils blancs \u00e0 la base. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Si on r\u00e9fl\u00e9chit plus, comment se fait il que cela ne soit qu&rsquo;en 2017 qu&rsquo;on s&rsquo;est demand\u00e9 pourquoi ne pas faire vieillir du rhums <strong>int\u00e9gralement <\/strong>dans des f\u00fbts d&rsquo;ex Sherry. Foursquare pratique souvent les doubles maturations, jamais de full par exemple. J&rsquo;imagine qu&rsquo;il y avait une bonne raison \u00e0 \u00e7a.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Autre consid\u00e9ration, les rhums choisis pour cette exp\u00e9rience sont tous avec une grosse typicit\u00e9, comme si on essayait de refaire le combo tourbe\/sherry, sauf qu&rsquo;ici j&rsquo;ai l&rsquo;impression que la sauce prend moins bien<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Donc pour moi, <strong>Rhum\/Sherry<\/strong> c&rsquo;est un peu comme<strong> Iron Maiden\/Blaze Bayley<\/strong> <em><sup>(ou Jenifer\/Mille Petrozza)<\/sup><\/em> , \u00e7a marche juste pas trop en fait&#8230; <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Et c&rsquo;est probalement la principale raison pour que cela ne soit apparu que si tard dans l&rsquo;histoire du rhum.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Qu&rsquo;est ce que c&rsquo;est encore que ces trucs ??
