{"id":10006,"date":"2020-03-17T10:14:50","date_gmt":"2020-03-17T09:14:50","guid":{"rendered":"http:\/\/leblogaroger.eu\/?p=10006"},"modified":"2020-03-17T10:14:51","modified_gmt":"2020-03-17T09:14:51","slug":"maggie-campbell-2","status":"publish","type":"post","link":"https:\/\/leblogaroger.eu\/index.php\/2020\/03\/17\/maggie-campbell-2\/","title":{"rendered":"Maggie Campbell"},"content":{"rendered":"\n<p class=\"has-drop-cap wp-block-paragraph\">Nouveau regard sur les \u00c9tats-Unis avec une interview de <strong>Maggie Campbell<\/strong>, pr\u00e9sidente et \u00ab\u00a0master distillers\u00a0\u00bb de <a aria-label=\"Privateer Rum (s\u2019ouvre dans un nouvel onglet)\" rel=\"noreferrer noopener\" href=\"https:\/\/privateerrum.com\/\" target=\"_blank\">Privateer Rum<\/a>, dans le Massachusetts au nord de Boston.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Ne connaissant pas vraiment cette distillerie, je me suis dit qu&rsquo;organiser un petit interview pourrait \u00eatre sympa et instructif\u2026 voici du coup ce dont nous avons caus\u00e9 par mail.<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Maggie, pourriez-vous vous pr\u00e9senter et nous expliquer quel \u00e9tait votre parcours avant Privateer ?<\/h4>\n\n\n\n<p class=\"wp-block-paragraph\">Je m&rsquo;appelle Maggie Campbell et je suis pr\u00e9sidente et distillatrice en chef de Privateer Rum. J&rsquo;ai commenc\u00e9 avec Privateer il y a 8 ans.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Avant de travailler chez Privateer, j&rsquo;ai travaill\u00e9 pour une boutique de distributeur de vins et spiritueux pendant environ 2 ans apr\u00e8s avoir \u00e9t\u00e9 assistant distillateur chez <strong>Germain-Robin<\/strong> dans la tradition du Cognac. J&rsquo;ai commenc\u00e9 la distillation avec ma passion pour le whisky. J&rsquo;ai \u00e9galement une formation en brasserie et je suis candidate au Master of Wine.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Je suis \u00e9galement vice-pr\u00e9sident de l\u2019<strong>American Craft Spirits Association<\/strong>, o\u00f9 je remplis mon deuxi\u00e8me mandat en tant que membre \u00e9lu du conseil et membre du conseil consultatif des anciens \u00e9l\u00e8ves du WSET, repr\u00e9sentant tous les dipl\u00f4m\u00e9s des \u00c9tats-Unis.<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Ici en Europe, nous ne connaissons pas vraiment les rhums Privateer, pourriez-vous nous expliquer comment s&rsquo;est form\u00e9 la distillerie et comment proc\u00e9dez-vous (m\u00e9lasse, levure, fermentation, type de f\u00fbt etc?)<\/h4>\n\n\n\n<p class=\"wp-block-paragraph\">Privateer est situ\u00e9 dans le <strong>Massachusetts <\/strong>aux \u00c9tats-Unis. Nous sommes sur la c\u00f4te maritime de l&rsquo;Atlantique Nord o\u00f9 il y avait une longue histoire de distillation du rhum de l&rsquo;\u00e9poque colonisatrice.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Le fondateur de Privateer,<strong> Andrew Cabot<\/strong>, avait un anc\u00eatre qui faisait d\u00e9j\u00e0 du rum il y a 6 g\u00e9n\u00e9rations, ici dans le comt\u00e9 d&rsquo;Essex, o\u00f9 se trouve notre distillerie. Il avait lu l&rsquo;histoire de sa famille et a m\u00eame retrouv\u00e9 un acte de vente original pour la distillerie.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Sur le march\u00e9 am\u00e9ricain \u00e0 l&rsquo;\u00e9poque, presque tout le rhum essayait d&rsquo;\u00eatre aussi bon march\u00e9 que possible et \u00e9tait souvent sucr\u00e9. Andrew a donc vu l\u00e0 l&rsquo;occasion de changer cela en utilisant les meilleures pratiques et faire du vrai rhum ici aux \u00c9tats-Unis.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Notre rhum est compos\u00e9 \u00e0 <strong>100% de m\u00e9lasse<\/strong> et est distill\u00e9 deux fois. Nous faisons nos rhums gr\u00e2ce \u00e0 un alambics ainsi qu&rsquo;une colonne \u00e0 8 plateaux. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Cela nous permet de cr\u00e9er une gamme de spiritueux et d&rsquo;assembler pour plus de complexit\u00e9 en cas de besoin.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Nos fermentations sont longues et lentes<strong> 6 jours \u00e0 23-25 \u00b0 C<\/strong> et nous obtenons une bonne conversion bact\u00e9rienne pour la profondeur des saveurs au cours des trois derniers jours. On obtient une bonne baisse de pH pour donner au \u00ab\u00a0wash\u00a0\u00bb une belle acidit\u00e9.<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Combien de f\u00fbts sont dans votre entrep\u00f4t pour le vieillissement? Pensez-vous \u00e0 faire de la double maturation etc ou uniquement en f\u00fbt ex bourbon?<\/h4>\n\n\n\n<p class=\"wp-block-paragraph\">Nous avons environ <strong>800 <\/strong>f\u00fbts de vieillissement! L&rsquo;un de nos atouts les plus pr\u00e9cieux est que nous avons un stock de rhum destin\u00e9 \u00e0 m\u00fbrir.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Il \u00e9tait tr\u00e8s important pour nous de nous assurer que le rhum ait suffisamment de temps pour vieillir et d&rsquo;avoir \u00e9galement des stocks de rhum am\u00e9ricain mature, alors que personne d&rsquo;autre ici ne travaille vraiment \u00e0 g\u00e9rer autant de f\u00fbts. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Certaines de nos expressions utilisent du <strong>ch\u00eane am\u00e9ricain neuf<\/strong> et peuvent avoir un profil semblable \u00e0 celui du whisky, ce qui a \u00e9t\u00e9 tr\u00e8s important pour nous aux \u00c9tats-Unis. Notre rhum est sec, a une texture souple et une bonne structure. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Nous sommes toujours flatt\u00e9s d&rsquo;\u00eatre confondus avec le rhum de la <strong>Barbade<\/strong>, mais nous faisons d\u00e9finitivement notre propre truc et leur style est diff\u00e9rent du n\u00f4tre.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Le vieillissement maritime de l&rsquo;Atlantique Nord donne des \u00e9pices de ch\u00eane et des esters floraux sur des notes plus fruit\u00e9es communes au rhum vieilli tropical.<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">\u00ab\u00a0True American Rum\u00a0\u00bb ? Y a-t-il une grande histoire du rhum aux \u00c9tats-Unis? Ici en Europe, il y a beaucoup de geeks de rhum &#8230; comment est le march\u00e9 aux \u00c9tats-Unis? <\/h4>\n\n\n\n<p class=\"wp-block-paragraph\">Les \u00c9tats-Unis sont d\u00e9finitivement loin derri\u00e8re l&rsquo;Europe dans l&rsquo;excitation et la consommation de rhum. Mais c&rsquo;est en pleine croissance. Le rhum \u00e9tait, il y a bien longtemps, si important sur le plan historique que les whiskies \u00e9taient vendus comme des \u00abrhums\u00bb parce que cela signifiait simplement l&rsquo;alcool comme expression g\u00e9n\u00e9rale.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Les buveurs de whisky semblent appr\u00e9cier nos rhums car ils sont secs et <strong>jamais sucr\u00e9s<\/strong>. Ils disent qu&rsquo;ils veulent essayer beaucoup de nouvelles choses, d&rsquo;autant plus que les prix du whisky continuent d&rsquo;augmenter et que la disponibilit\u00e9 est continuellement en baisse. Quelles devraient \u00eatre les grandes lignes de celui-ci?<\/h4>\n\n\n\n<p class=\"wp-block-paragraph\">Je pense que nous sommes encore tr\u00e8s nouveaux et trop immatures pour vraiment avoir une identit\u00e9 qui devrait \u00eatre codifi\u00e9e. Nous pourrions voir \u00e0 l&rsquo;avenir une organisation de distillateurs dans le but de cr\u00e9er un style de rhum authentique pour la Nouvelle-Angleterre, mais en ce qui concerne les lois r\u00e9elles qui l&rsquo;entourent, je pense que nous avons besoin de temps. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Je sais certainement ce que je voudrais que l&rsquo;IG soit, mais c&rsquo;est diff\u00e9rent.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Aux \u00c9tats-Unis, il existe une organisation appel\u00e9e <strong>Empire Rye<\/strong> qui essaie de d\u00e9finir le whisky de seigle de New York. Je pense que vous n&rsquo;avez pas encore de distributeurs dans l&rsquo;UE. Comment les fans europ\u00e9ens peuvent obtenir des bouteilles ? <\/h4>\n\n\n\n<p class=\"wp-block-paragraph\">Nous allons proposer trois sorties et flash info, il y aura une mise en bouteille <strong>Paradisetto <\/strong>pour Velier!<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Nous sommes tr\u00e8s enthousiastes. Il y aura un <strong>Habitation Velier<\/strong> \u00e2g\u00e9e et un non vieilli qui seront disponibles aux \u00c9tats-Unis et en Europe. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Nous serons en vente en Italie et en France via <strong>LM&amp;V<\/strong> et il y aura la sortie <strong>Paradisetto <\/strong>qui est uniquement pour l&rsquo;Europe.<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Pourriez-vous nous expliquer les grandes lignes de votre gamme ? J&rsquo;ai vu un rhum blanc et un peu d&rsquo;ambr\u00e9 \u2026 Je peux imaginer que le plus vieux a 2-3 ans?<\/h4>\n\n\n\n<p class=\"wp-block-paragraph\">Notre rhum<strong> Navy Yard<\/strong> est toujours un rhum 100% m\u00e9lasse brut de f\u00fbt vieilli en f\u00fbt de ch\u00eane am\u00e9ricain. Il est extr\u00eamement important que nous maintenions notre <strong>qualit\u00e9 <\/strong>et ne renoncions jamais \u00e0 cela sous la pression. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Nous voulons \u00eatre ici pour le <strong>long terme<\/strong> et continuer \u00e0 faire un excellent travail pour honorer tous ceux qui nous ont soutenu jusqu&rsquo;\u00e0 pr\u00e9sent. Aux \u00c9tats-Unis, j&rsquo;esp\u00e8re que la r\u00e9putation du rhum augmentera encore comme elle le fait pour le moment.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Je pense que les producteurs de rhum du continent pourraient se connecter davantage avec nos pairs dans les Cara\u00efbes pour avoir une meilleure perspective et compr\u00e9hension sur le monde du rhum.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">La familiarit\u00e9 avec la distillation du rhum s&rsquo;am\u00e9liorera avec les producteurs \u00e9mergents et nous verrons de meilleures coupes effectu\u00e9es pour une meilleure qualit\u00e9 et des stocks plus anciens.
